Local ingredients and freshness take center stage alongside traditional culinary craftsmanship. Everything is made fresh and, above all, by hand in-house. Whether it’s the hand-rolled croquettes made from Heide potatoes, the very popular homemade wild boar sauerfleisch, the Heidschnucken bratwurst (from Schäferhov e.V.), the various sauces, or the assortment of desserts—everything is made in-house.
All dishes are freshly prepared à la minute for you by our head chef, Lutz Bröker, using ingredients sourced primarily from the region and prepared with the highest culinary craftsmanship according to our own recipes. When sourcing ingredients, we always prioritize high quality and regional products—for example, with first-class organic wines from the Gustavhof or delicious spirits from the heath.
